Lemon Cake

Ingredients Butter (or) Margarine 115gm Sugar 225gm Refined flour 225gm Baking powder 2 tsp Salt a pinch Milk 150ml Eggs 2 Lemon essence 1 tsp Method 1. Sieve flour and baking powder.  2. Cream butter and sugar till light and fluffy. 3. Beat the eggs and add to creamed mixture. Continue beating. 4. Fold in dry ingredients and add lemon essence.  5. Pour into greased pans. 6. Bake at 190°C for 15 to 20 minutes.  7. Sandwich with jam or butter cream. Enjoy your Bite!!! 

Fudge Cake

Ingredients Butter 85gm Vanilla essence 1 tsp Sugar 225gm Eggs 2 Cocoa powder  40gm Milk (sour) 220ml Hot water 85ml Refined flour (or) Maida 200gm Soda ¼ tsp Salt a pinch Method 1. Cream butter, sugar and vanilla essence together till light and fluffy. 2. Beat the eggs and add them. 3. Mix cocoa powder in hot water and add alternately with sour milk and mix well. 4. Shift together flour, soda and salt and add to mixture and mix well. 5. Bake for 25 to 30 minutes at 175°C. Enjoy your Bite!!!

Black Forest Cake

Ingredients Refined flour (or) Maida 60gm Baking powder ¼ tsp Coco powder 60gm Baking soda a pinch Eggs 4 Sugar 120gm Butter (melted) 120gm Vanilla essence 2 drops For Decoration  Whipped cream 200gm Chocolate (grated) 15gm Cherry and cashewnuts  a few Method 1. Sieve flour, cocoa powder, baking powder and baking soda together. 2. Beat the eggs and sugar over hot water to custard consistency. 3. Lightly fold in sieved flour and melted butter, adding a little water to get a pouring consistency. 5. Line and grease two 18cm (7'') cake tins. 6. Put the mixture in tins and bake at 205°C for about 20 minutes.  7. Cool and sandwich with fresh cream and put a thick layer of cream on top.  8. Finish  with chopped nuts, grated chocolate on sides on top and

Rough Puff Pastry

Ingredients Refined flour (or) Maida 225gm Butter 150 to 170gm Squeeze of lemon juice half  Cold water For mixing Method 1. Shift flour and salt together into a bowl. 2. Add butter cut into small cubes.(do not rub it). 3. Mix with lemon juice and sufficient cold water to make a stiff dough. 4. Turn onto a lightly floured board and roll into a rectangle keeping the edges straight. 5. Fold bottom third of pastry up and top third down. Seal the edges lightly with a rolling pan. 6. Set aside for 15 minutes in a cool place. 7. Turn pastry so that folded edge is to your right. Repeat rolling, folding and turning three or four times. 8. Roll out and use as required. 9.Bake at 250°C for about 15 to 20 minutes. Enjoy your Bite!!!!

Jam Buns

Ingredients (serves 8 to 9 buns) Refined flour (or) Maida 115gm Baking powder ½ tsp Sugar 55gm Salt a pinch Jam 45gm Milk a little for mixing Butter 45gm   Method  1. Sieve flour, baking powder and salt together.  2. Rub in fat and add sugar. 3. Mix to a stiff dough with milk. 4. Knead the dough lightly and divide into 8 to 9 pieces.  5. Make a hole in each piece and fill with little jam. 6. Take a baking tray , grease butter and dust with flour.  7. Bake at 205°C for 15 to 20 minutes. Enjoy your Bite.

Cup Cakes

Ingredients (for 12 cakes) Butter      55gm Refined flour (or) Maida      115gm Egg             1 Baking powder       ½ tsp Sugar       55gm Paper cases      10 to 15 Vanilla essence (or any essence you wish)       1 tsp       GlacĂ© icing Icing sugar       140gm Warm water      To mix Pink colouring (if needed)   A few drops Method       1.   Sieve flour and baking powder.       2.    Cream butter and sugar.        3.    Beat the egg separately.       4.    Add the vanilla essence to egg and beat well.       5.    Add the cream to the egg mixture.         6.    Blend well. Add the sieved flour and baking powder.       7.   Blend well. Divide into portions if needed for colouring the cup cakes.       8.    Take a cupcake mould. Put the paper cases and pour the mixture.       9.   Bake at 205°C

Vanilla Cakes

 Ingredients  (for 15buns)                            Butter      55gm Sugar     115gm Milk (if needed)     ¼ tsp Maida or Refined flour   115gm Baking powder     ¼ tsp Vanilla essence          2 Eggs       2 Method : 1. Melt the butter. Add sugar till light. 2.  Beat the eggs till fluffy and add gradually to the butter and sugar. 3.  Continue beating the mixture. 4 .   Shift together flour and baking powder and fold into creamed mixture with sufficient milk to give a dropping consistency. 5.  Add vanilla essence, mix well. 6.  Grease the tray and pour the mixture. 7.   Bake at 190°C for 15 to 20 minutes.
